Hush Puppies
•1 Cup self rising corn meal
•1/2 Cup self rising flour
•1 Med. onion chopped
•1 egg
•milk
•black pepper
Mix corn meal, flour, chopped onion, and egg in a mixing bowl, add milk and stir until mixture is just barely thick enough to spoon in hot oil and still make a ball (be sure not to make batter too stiff so that hush puppies will be dry and packed) add black pepper and season to taste.
Set mixture aside and let rise while you are cooking your fish, this helps in making the hush puppies fluffy. Spoon in hot oil and cook till golden brown. You might try addiing a little finely chopped bell pepper if desired
